Calling it Cauliflour

Here’s how I kicked off the day. I thought I was going to eat classed-up breakfast tacos, but turns out sunny side up eggs get claustrophobic in a tortilla and run their way outta there. So it’s best to just kebab the tasty textures on your fork. Those yellow things are cauliflower tortillas. If you do a very fine chop job in the food processor (which I do not have) this would be relatively easy. Instead, I beat the cauliflower to death with my muddler until it was tiny enough to use as a flour alternative- the point when cauliflower become cauliflour. I recommend not infusing the mixture with your sweat via the pioneer woman route, and using a food processor instead.

So my tortillas are not as tortilla-like as these, but I think that goes back to my lackluster muddling skills. Just one more instance of machine > man. They’re made with a couple eggs, but did not taste eggy at all. I’m not a big cauliflower fan, but these bore such a striking resemblance to decadent carb cakes that I loved every bite. I have all these preconceived ideas of the shape and sizes of delicious things, so not sacrificing the form does a lot for me psychologically. We’ll see if they hold up when bearing the burden of scrambled eggs or gyro meat. Not sure it can be dubbed a tortilla until it proves its brawn.
